I saw this recipe on Friday evening, and I was started preparing it about a hour later. I needed something to satisfy my sweet tooth! This was perfect since it did not require me to turn on the oven or stove. The ingredients were all items that I keep in my house on a regular basis, and you probably do as well.
They were a tad on the sweet side, and that is probably because I used Honey Roasted Crunchy Peanut Butter. Next time I know to cut down on the white sugar if I will be using that type of peanut butter.
No Bake Peanut Butter Oatmeal Balls
Adapted from Taste and Tell via The Crepes of Wrath
Note: The ingredients below make half of the original recipe. I was able to roll out 13 balls.
1 cup rolled old-fashioned oats
6 Tbsp. white sugar
1 1/2 Tbsp. unsweetened cocoa powder
1/2 Tbsp. water
1/4 tsp. vanilla extract
1/4 cup butter, softened
2 Tbsp. peanut butter (I used Honey Roasted Crunchy Peanut Butter)
1/2 cup Confectioner’s sugar
1. In a large bowl, combine the oats, sugar, and cocoa powder. With clean hands, mix in the water, vanilla extract, butter, and peanut butter to form a dough.
2. After washing the dough from your hands, form the dough into 1-2 inch balls. Roll each ball in the Confectioner’s sugar until thickly coated.
3. Chill on a baking sheet in the refrigerator for 30 minutes before serving.
