I made this last week and totally forgot to post it! Any leftover vegetables can be used, but since I had some spinach that was on the verge of wilting and mushroom stems left from this recipe, I decided to use those items.
This was quick to prepare and easy for me to cut into for breakfast before work (the picture does not do it justice!).
Crustless Spinach & Mushroom Quiche
My Own Recipe
1 cup sharp cheddar cheese, shredded
1 cup fresh spinach
1/2 cup mushrooms, sliced or diced
2 Tbsp. milk
Salt & pepper to taste
1. Preheat oven to 375 degrees. Prepare a casserole dish with cooking spray.
2. In a medium bowl, whisk all ingredients together.
3 Pour into casserole dish and bake for 25-30 minutes, or until a toothpick comes out clean.
