Oatmeal Cookies

So many cookies?! There is no such thing! I was planning on using another recipe for these cookies, but saw this one on the back of the oatmeal canister and decided to go for it. The cookies were okay, nothing spectacular about them. They had the crunchy exterior and soft middle that I like though. I made these for someone else so I wanted a basic cookie and that’s what I got. The recipe stated that it made 6 dozen, but I only got 4 out of it.

Oatmeal Cookies

Adapted from Publix

Ingredients:
1 cup packed brown sugar
1/2 cup granulated sugar
3/4 cup vegetable shortening
1/4 cup water
1 large egg
1 tsp. pure vanilla extract
3 cups old-fashioned (rolled) oats
1 cup all-purpose flour
1/2 tsp. baking soda
1 tsp. salt (optional)

Directions:
1. Preheat oven to 350 degrees. Prepare cookie sheet with parchment paper.

2. Beat sugars, shortening, water, egg, and vanilla until creamy. Combine oats, flour, baking and salt in a separate bowl. Add oat mixture to shortening mixture and mix well. Drop by rounded teaspoons onto prepared cookie sheet.

3. Bake 12 to 14 minutes or until lightly golden brown. Let stand 1 minutes before removing to racks to cool.
