Here’s a break from the cookies: sweet and spicy pecans (check out the new Pecan label I added since I use them so much is cooking/baking). This is a recipe that I received from my “Recipe to a Good Marriage” bridal shower that my co-workers threw me. This one is especially important to me because my boss gave it to me. She is a very supportive and kind woman and I love having her as my boss. She was even nice enough to give me a packet of the spices that went along with the recipe.
This is the second time I have made these, and I love them. They would be a great snack to have a holiday party, but I included them in a gift exchange package as well as in a box to my sister’s friend in Kuwait (I will be doing a gift exchange round-up soon). If you like a little more heat, add more cayenne.
Sweet & Spicy Pecans
From Linda, my boss
Ingredients:
1/2 cup sugar
1 1/2 tsp. salt
1 1/2 tsp. cinnamon
1 1/2 tsp. chili powder
A pinch of cayenne
1 egg white
2 cups pecan halves
Directions:
1. Preheat oven to 300 degrees and spray a non-stick baking sheet with cooking spray.
2. Mix the sugar and spices together in a small bowl. Beat the egg white lightly with a fork in a larger bowl. Toss the pecans in the egg white and stir to coat. Sprinkle spice mixture over the coated pecans evenly.
3. Using your fingers, left pecans one by one onto baking sheet-separating them. Discard any leftover sugar/egg mix.
4. Bake for 30 to 35 minutes. Cool for 5 minutes. Transfer to another baking sheet and break apart as needed. Let them cool completely.
Keep the pecans covered in a dry place and they will be good for 5 days.
