White Chocolate Chip Craisin Hazelnut Cookies

That title is a mouth full! I bought a large bag of Craisins from Costco (have I told you how much I love Costco?) and went searching for recipes to incorporate them in. This one was right up my alley because I love white chocolate. The original recipe called for pecans, but I substituted hazelnuts since I’m trying to get rid of what I have (remember the post from yesterday?). They still tasted great.


White Chocolate Chip Craisin Hazelnut Cookies
Adapted from Sweet Sista’

Ingredients:
1 cup (2 sticks) unsalted butter
1 cup brown sugar
3/4 cup sugar
2 large eggs
1 Tbsp. vanilla extract
3 cups all-purpose flour
1 tsp, baking soda
3/4 tsp. kosher salt
1 cup Crasins
1 1/2 cups white chocolate chips
1 cup hazelnuts, chopped

Directions:
1. Preheat oven to 350 degrees. Prepare cookie sheets by lining them with parchment paper.

2. Cream butter and sugars until light and fluffy with an electric mixer. Beat in eggs and vanilla. In a separate bowl, combine flour, baking soda, and salt.

3. Slowly add the flour mixture to the butter mixture. Stir with a wooden spoon until almost incorporated. Add Craisins, white chocolate chips, and hazelnuts. Mix until well incorporated.

4. Roll into Tablespoon-sized balls and bake for 11-15 minutes, depending on the size of the cookies. Let them cool completely on a wire rack.
