This week’s Sweet Melissa Sunday was hosted by Tracey of Tracey’s Culinary Adventures. She chose something that was definitely included ingredients that were in season, strawberry rhubarb cobbler pie. The reason this is both a pie and a cobbler is because it has a pie crust and a crust (in the form of biscuits) on the top.
I have never had before and didn’t even know what one looked like. Turns out it looks like red celery. Lucky for me, I found it right by the strawberries. I also used this as an opportunity to make a pie crust from scratch using Melissa’s flaky pie crust recipe (#16 on my 101 in 1001 list). I even went out and bought a pastry blender and a pie plate.
It was time consuming, but it turned out really nice and wasn’t as hard as I thought it would be.
The filling was on the brink of being too sweet. It also didn’t set like I wanted to. That’s why you won’t be seeing a picture of a slice of pie; it was soupy. I think my favorite part was the biscuit topping. The dough was slightly sweet and light.
Thanks to Tracey for choosing a great springtime recipe. You can checkout the other pies by visiting the blogroll here.
