Mr. G brought home some blackberries a couple of weeks ago and I decided to make a cobbler with them. Actually, I made two. One the weekend he brought the home and another this past Labor Day weekend (I froze some of them). This recipe from The Pioneer Woman was very quick.
Anytime I don’t have to roll out dough, I’m happy. I decided to double the amount of blackberries because I like more filling than crust. Delicious, especially with vanilla ice cream!
Adapted from The Pioneer Woman
1/2 cup Butter (1 stick), plus additional for baking dish
1 1/4 cups Sugar
1 cup Self-Rising Flour
1 cup Milk
4 cups Blackberries
1. Preheat oven to 350°. Melt butter in a microwavable dish. Use additional butter to butter a baking dish.
2. Pour 1 cup of sugar and flour into a mixing bowl. Whisk in milk, and mix well. Pour in melted butter and whisk it all well together.
3. Rinse and pat dry the blackberries. Pour the batter into the buttered baking dish. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle ¼ cup sugar over the top.
4. Bake for 1 hour, or until golden and bubbly. If you desire, sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it’s done.
