It is that time of year again people: Epcot International Food & Wine Festival time at Walt Disney World. My sister and I are going to be making a road trip there in less than a month! This year we will be running in the inaugural Wine & Dine Half-marathon Relay in addition to a whole lot of eating and drinking (after the relay of course).
To commemorate this event, I will be bringing you a different recipe from last year’s cookbook every Thursday up until we leave. I will have a different course each week!
This week I am starting with a drink, the Mango Lassi, or chilled mango yogurt drink, from New Delhi, India. This is perfect for the summer heat.
I subsituted Greek yogurt for regular yogurt because I already had some on hand. The sugar is optional, but if your mango is ripe, you won’t need it.
Mango Lassi
Adapted from the 2009 Epcot International Food & Wine Festival Cookbook
Serves 4
Ingredients:
2 cups ripe mango, chopped
Pinch of salt
1 cup chilled whole milk
1 cup whole-milk plain Greek yogurt
2-3 tsp. sugar, optional
Directions:
1. If mango has stringy fibers push through a sieve with the back of a spoon. Refrigerate until cold.
2. Combine mango, salt, milk, and yogurt in a blender and puree until smooth. Taste and add sugar to taste. If you want the drink colder, add about 8 cubes of ice. Can be refrigerated up to 24 hours.
