I totally forgot to take of picture of this one before we gobbled it up. It was quite tasty and perfect for a weeknight meal.
Mexican Beef ‘n’ Rice
Adapted from Southern Living February 2010
1 lb. lean ground beef
1/3 cup onion, chopped
1-15.5 oz. can low sodium black beans, drained and rinsed
1 cup refrigerated salsa
2 Tbsp. cilantro, chopped
1 Tbsp. lime juice
1-8 oz. ready-to-serve Mexican rice
Toppings of your choice such as shredded cheese, sour cream, salsa, cilantro
1. Cook ground beef and onion in a large skillet over medium-high heat, stirring often, for 6-8 minutes or until beef is brown and crumbles. Drain. Wipe skillet clean
2. Combine ground beef mixture, beans, salsa, cilantro, and lime juice in skillet and cook for an additional 3-4 minutes or until thoroughly heated.
3. Prepare rice according to package directions. Then, stir into ground beef mixture. Serve with toppings of your choice.
