Homemade Vanilla Extract

This recipe showed up in my Google Reader in the summer, and I knew it was something I wanted to give as gifts to a few special bakers in my life (and keep a little for myself).  This is one gift you will need to prepare in advance as the extract takes a couple of months to age.

I bought the vanilla beans from Amazon and used Mason jars for my presentation.  You could definitely use smaller jars to make them into smaller gifts.  For this size jar, I used 5 split vanilla beans (don’t scrape them!) and about 2 cups vodka.  Then, you just place the jars in a cool, dark place and every couple of weeks, shake each jar to mix it up.  The extract is ready to be used in a couple of months.

The vanilla beans can be used again when you need to top off the vodka or you can add more beans as needed.  Short and simple!  I have started using this vanilla extract and it is great.

I have done homemade vanilla extract with both vodka and
    bourbon. Both are great.

Just stopping by to say I’m in week 3 of my vanilla making process! I didn’t cut the beans. Yikes! Should I go back and cut them???
