Roasted Tomato Soup

I am not much of a tomato soup fan.  I love the tomato basil soup from La Madeleine, but that was it…until I made this.  I made this for my BFF and her husband(who welcomed a baby boy into the world today), and while I tasted it to make sure it had enough seasoning, I knew I would need to make some for myself.

It was very easy with using canned tomatoes.  I used Muir Glen organic tomatoes which are fabulous.  This was perfect with grilled cheese sandwiches on a chilly evening or can be frozen for a later time.

Roasted Tomato Soup
Adapted from Broke Ass Gourmet

1/2 Tbsp. extra virgin olive oil
4 cloves garlic, minced
2-14.5 oz. cans roasted crushed tomatoes
1/4 cup half-and-half
Salt and pepper to taste
Chopped parsley for garnish (optional)

1.  Heat olive oil in a medium saucepan over medium heat. Add garlic and cook, stirring occasionally, for 2-3 minutes,until fragrant. Add tomatoes and cook, covered for 15 minutes. Stir occasionally.

2.  Puree using a blender, food processor or immersion blender. Return to pot, stir in the half-and half and season with salt and pepper to taste. Cook, uncovered, over medium heat for 5 minutes.  Sprinkle with parsley once in soup bowls.

    Will try this one as I am always making tomato soup. We love the Muir Glen tomatoes as well…the fire roasted ones are my favorites! Always reminds me of Muir Woods. You have it photographed so nicely…it’s just tomato soup and you make it look so elegant and irresistible.
